Market questions, answered

How can I tell if seafood is fresh?
Look for clear, bright eyes, a clean briny smell (never fishy or like ammonia), firm flesh that springs back when pressed, and bright pink-red gills. At our counter everything is iced and turned daily, and we'll show you the catch before we wrap it.
How much king crab should I buy per person?
Plan on about three-quarters of a pound of legs per person for a meal, or a pound-plus for a feast. Tell us how many you're feeding and we'll weigh it out on the spot.
What's the difference between king crab and snow crab?
King crab legs are thicker, meatier and sweeter, the famous baseball-bat legs. Snow crab comes in smaller, easy-crack clusters with a milder taste and a lower price. We carry colossal king crab by the pound.
How do I cook king crab legs at home?
They're already fully cooked, so you're just warming them through: steam 5 to 7 minutes, or bake at 400 degrees for 8 to 10. Prefer not to fuss? Our kitchen will heat and crack them for you.
How much live lobster should I get per person?
A one-and-a-quarter to one-and-a-half pound lobster per person is the sweet spot. Reserve ahead for big orders and we'll have them ready for you.
What does alligator taste like?
Mild, a little like chicken with a firmer bite. Most folks start with our fried gator bites, a genuine Gulf-country specialty you won't find at most Indy markets.
Is your seafood fresh or farm-raised?
Both, and always clearly labeled. Our king crab, Gulf shrimp and much of the fish are wild-caught. Ask the counter about any item and we'll tell you exactly what it is and where it's from.
Which Caplinger's locations have the fresh seafood market?
Our Shadeland and Southside locations are full retail markets with the fresh-fish counter, live lobster by advance order and by-the-pound seafood. Pendleton Pike and The AMP downtown are Seafood Kitchens focused on prepared food.
Do you fillet, clean and season the fish I buy?
Yes. Tell us how you want it (filleted, skin on or off, portioned, seasoned) and we'll prep it to order at the counter, no extra charge.
